The Benefits Of Eating Raw Vegetables

I recently got into eating raw vegetables.  Have you or do you eat vegetables raw?  I was watching a video by internet guru Even Pagan and he mentioned that although he would rather not eat raw brocolli, he does it anyway for the nutritional benefit. 

Now me being the ever growing wellness enthusiast that I am decided to try it.  The taste was everthing I thought it would be.  I’m not gonna get into what I thought about the taste because the point of this discussion is to focus on the nutritional benefit of doing this.  Anyway, I’ve been eating raw brocolli, spinach, bell peppers and couliflower for the past month now and I have to say I do feel a difference. 

After watching the video and embarking on this raw vegetable adventure (no I’m not a vegan now), I began to do some further research and I found some very interesting information to say the least. 

To start, cooking vegetables can diminish almost all of the nutrients and enzymes that our bodies need to maintain proper health.  Just because you might eat vegetables everyday doesn’t mean that you’re doing your body a favor because all of the nutrition is still floating at the bottom of the pot in the juice. 

 The best kinds of raw vegetables to eat are the green ones.  Green vegetables serve as the basis of nearly all life on this planet.  If this sounds too far fetched, then just think about the fact that almost every living organism on earth can only survive by 2 ways.  Eating raw green vegetables or by eating an animal that eats raw green vegetables.

Raw vegetables have an abundance of  minerals, vitamins, enzymes and natural sugars.  These are all ot the VERY important things that your body needs to function like it should and the raw vegetables help stabilize and regulate your natural bodily functions.

One of the changes that I’ve noticed in my body is how well I’m digesting my food now.  This is because of the enzymes.  The enzymes in raw vegetables help your body digest food. This is one of the reasons that green vegetables are sometimes considered “nature’s laxative,” because (collard, kale, spinach and turnip greens) they get your stomach working properly.

So why eat raw you ask?  Scientific studies have shown that cooking vegetables greatly reduces the amount of vitamins, minerals, and enzymes.  If you absolutely have to cook your vegetables, then you’ll be happy to know that steaming, although also reducing the nutritional value, still retains a higher amount than other methods. 

So start eating  raw vegetables as soon as humanely possible.  It’s gonna take some getting used to if you’ve never tried it before, but your body will thank you tremendously.   Enjoy your wellness.

Rahim,
Great post and even better reminder for myself to get serious about raw vegetable consumption. I’ve been slacking of late by eating mini-carrots at lunch. That’s not good enough…
